Serra da Estrela Cottage Cheese

Dos Lobos - Cottage Cheese Product description::
The Serra da Estrela Cottage Cheese is a homemade cheese produced using the whey left over from the production of the Serra da Estrela cheese, using raw milk from the Serra da Estrela breed of sheep from the region designated for this production.
It is a cottage cheese of white, humid and soft paste obtained by heating the whey, leading to its coagulation.
Traditionally it is presented in small wicker baskets that mark the cheese with the basket’s pattern.
Characteristics
The Serra da Estrela Cottage Cheese has a smooth and milky taste.
Packaging and presentation:
The Serra da Estrela Cottage Cheese is traditionally presented in vegetable parchment.
Transport and storage: Refrigerated at temperatures between 0° and 5°C
Best before date: To be consumed preferably up to 5 days after its production.
Conditions of use: As presented or for cooking. To be consumed by the general public, except by people who are lactose intolerant.
Serra da Estrela Cottage Cheese is traditionally eaten on its own or with jams, sugar or honey.


Serra da Estrela Cheese PDO

Dos Lobos - Serra da Estrela Cheese PDO Product description:
The Dos Lobos Serra da Estrela Cheese is a handmade cheese produced using raw milk from the Serra da Estrela breed of sheep from Oliveira do Hospital, part of the region designated for this production.
It is a cured cheese, of semi-soft, buttery paste, white or slightly yellow in colour, with few or no eyes, obtained by slow draining of the curd, after coagulation of the milk by the cardoon (Cynara cardunculus, L.)
Characteristics
A cured cheese, of semi-soft paste, with a humidity level of between 61 % and 69%, relatively fat free with a fat in dry matter level of between 45% and 60%.
Shape – Short cylinder (plate), regular, with bulging sides and some bulging on the top, with undefined edges.
Rind – of malleable consistency, allowing for some some fluctuation. Whole, well-shaped, smooth and fine. Uniform straw-yellow in colour.
Paste – of closed texture, slightly buttery with a cutting area that loses its shape easily.  Unctuous, with some eyes and white or slightly yellow in colour, uniform.
Aroma and taste – smooth bouquet, clean and slightly acidic.
Weight – varies between 0.5 and 1.7kgs per unit.
Maturation:Minimum of 30 days (for small cheeses) at temperatures between 6 and 12°C and relative humidity of 85 to 90%.
Packaging and presentation: The Serra da Estrela cheese from the Dos Lobos Dairy is presented surrounded in white gauze, in a corrugated cardboard box. It can also be vacuum packed for better conservation. The Dos Lobos dairy has 2 sizes available at present: Small (for cheeses weighing approximately 500g.) and Large (for cheeses weighing more than 800g.)
Transport: Refrigerated at temperatures up to 10°C
Storage: Refrigerated at temperatures of between 0 and 5°C
Best before date: To be consumed preferably between 1.5 and 2.5 months after its date of production.
Conditions of use: As presented or for cooking. To be consumed by the general public, except for those who are lactose intolerant.
Observations: 2.5 months after the date of its production, if not frozen, the Serra da Estrela cheese starts to age leading to the hardening of its paste.


PDO Serra da Estrela Mature Cheese

Dos Lobos - PDO Serra da Estrela Mature Cheese Product description:
The Serra da Estrela Mature cheese is the result of a long maturation period of the Serra da Estrela Dos Lobos cheese (minimum of 120 days) in a natural environment, allowing it to gain a stronger flavour and to harden according to its maturation.
It’s a cured cheese, of hard paste obtained through long maturation.
Characteristics
A cured cheese of hard paste, with a level of humidity of between 49% and 56%, with a fat level on dry content of more than 60%.
It is a darker coloured cheese than the Serra da Estrela cheese.
Maturation: Minimum of 120 days at ambient temperature and humidity.
Packaging and presentation: The Mature Serra da Estrela cheese comes in a corrugated cardboard box. It may also be vacuum- packed for better conservation or ready sliced. On some occasions it may be covered in a paste made of olive oil and paprika.
Transport: Refrigerated at temperatures up to 10°C
Storage: Refrigerated at temperatures of between 0 and 5°C
Best before date: To be consumed preferably between 6 and 9 months from its date of production.
Observation: The Mature Serra da Estrela cheese from the Dos Lobos dairy undergoes frequent cleaning throughout its production and maturation to remove excess mold. This way, once it is purchased, if it is not consumed immediately, it should be kept in a cool and dry place and it may require regular cleaning, this can be done using a damp cloth.
